Burgerology opens in RVC

Burger lovers now have another option to satisfy their patty cravings in Rockville Centre with the opening of Burgerology.

The new eatery, on the corner of South Village Avenue and Merrick Road, opened on Jan. 30 in the space formerly occupied by The Smokin’ Rib.

Owning burger restaurants is nothing new for the Galatoulas family. Eddie is the head of Burgerology, while his wife, Georgia, owns the Massapequa-based New York Burger Bar. The two places are separated by just over nine miles on Merrick Road.

“I always wanted to go to Rockville Centre,” said Eddie Galatoulas. “I got a great deal. I just love the corner. We had an hour and a half wait the other day. I rather have it smaller and full all the time then big and look empty.”

Adorning the walls are pictures of Benjamin Franklin and Albert Einstein, along with mathematical equations written on makeshift chalkboards. The bar is centrally located in the space and wooden tables and flat-screen televisions complete the scene.

“I just liked the whole Einstein theory,” Galatoulas said. “I came up with it two years ago, when we were doing a burger bar. We were coming up with names. My logo guys in England came up with Burgerology.”

In keeping with the scientific theme, the wait staff are adorned with long, white laboratory coats and are called “burgerologists”, with the hashtag #BURGERGENIUS printed on the back.

Some of the burgers also have names that complement the restaurant, such as the Atomic, with bacon, pepper jack cheese, grilled jalapenos and chipolte aioli, the Benjamin Franklin Burger, topped with Cajun spices, bacon and crumbled blue cheese, the Edison, with a sunny-side up egg, bacon jam and maple aioli, and the Baconology, which is infused and topped with, of course, bacon, bacon jam and American cheese.

Patrons can also create their own burgers through four base patties and an array of cheeses and toppings.

Burgerology also sells 14 types of sandwiches, different flavored fries and shakes, salads and desserts. Appetizers range from a giant Bavarian salted pretzel with three dipping sauces, different mac-n-cheese offerings, wings and sliders.

The children’s menu offers chicken fingers, mac-n-cheese, burgers and grilled cheese.

“I just think that my place is more kid-friendly,” Galatoulas said.

The restaurant hours are from at 11:30 a.m. to 11 p.m. Monday through Thursday and 11:30 a.m. to 1 a.m. Friday and Saturday. On Sunday, it is open from noon to 11 p.m.
